Broccoli Potato Vegan Soup

This simple vegan soup is surprisingly comforting on chilly nights.  Makes for a light but cozy dinner.

Ingredients

1 medium onion, chopped3 heaping tablespoons flour4 cups vegetable stock4 cups vegan milk (soy or other)2 vegetable bouillon cubes (maggi)5 medium potatoes, peeled and chopped to 1 in. pieces1 cup broccoli, steamed and choppedgarlic powderrosemary, thyme, or preferred spices to tastesalt & pepper

Instructions

1. Saute onion in oil until golden.2. Stir in flour.3. Add two cups of stock and two maggi. Bring to boil and stir frequently.4. Add remaining liquids, one cup at a time, bringing to boil with each addition and stirring frequently.5. Add potatoes, bring to boil, then let simmer.6. When potatoes are cooked through, stir in steamed, chopped broccoli.7. Add salt, pepper, garlic powder, and spices to taste.8. Serve hot. Add a squeeze of lemon if you prefer a lighter taste. And what will you have for dessert? After all that soup goodness, you might enjoy something crunchy like these biscotti.
